Ok, I will admit it, I get excited over a great cookbook and this cookbook got me giddy.   It was one of those cookbooks where I started to look at it and I was so overwhelmed by all its greatness that I just had to walk away.  I know, call me strange but sometimes I just have to take a breather and gather myself.   I know that before the weekend is over, I will have purchased this cookbook and will be awaiting its arrival.   So what is so exciting about this particular cookbook, well for starters it contains food that I would normally eat and prepare. The recipes are not hard to prepare nor do they require ingredients that I would have to search high and low for in the supermarket. There are some recipes that I would like to try, recipes that I would have to step outside my normal boundaries and experiment with but they are not so far outside my normal dishes that I would keep putting them off “for another day.”   Not every recipe has a photograph but that’s okay because just looking at the ingredients that are listed with each recipe, you can phantom what the dish might look like. The ingredients again are everyday items that I probably have in my pantry right now or like I said before, they are ingredients I could find at my store without having to go to a specialty market.  

 

There was one recipe that I know I will never be trying. I had to laugh when I came across Squirrel Pot Pie, now just visualizing cleaning and quartering 6 squirrels took my appetite away but hey, to each it’s own. I’m not fond of cornbread but the Cornbread Salad looks like something I will be trying because adding ranch dressing and bacon and veggies to cornbread just made it something else. There are lots of chicken recipes and I know I will be testing them out, Bacon & Cheese Stuffed Burgers, Mac –and –Cheese Burgers, Blueberry BBQ Sauce, the Pork Chop Casserole (the picture is to die for with the chops lying in a cream sauce), Chicken Casserole, Corn Pudding, and Corn Fritters, these are just a few of the recipes that have me excited. There are breads & desserts too but I try to not look at these pages. For those who are interested here are some of the rolls and desserts: Pumpkin Cake Roll, Easy Yeast Rolls, Boston Cream Pie, Effie’s Salted Caramels, German Chocolate Cookies, Upside-down Apple Bacon Pie and Schoolyard Peanut Butter Bars (dang, those look like Scotcharoos, my favorite!). I like the size of this cookbook as it fits nicely in my hands and will lie on the countertop. Great find!
